Vilanova Berbie

The first bottling from the Castan family's farm whisky, in the Tarn: a single malt from the house's own organic barley, distilled in copper stills and matured, cask by cask, in French oak that once held sweet and dry white wine, at 43% unchill-filtered. Bottled since 2013, each batch is unique: a greedy nose of vanilla, honey, wax and caramel; a rich, unctuous palate of candied apricot, plum, dark chocolate and nuts; a warm, fresh, woody finish.
