Shizuoka Pot Still K

The heir to Karuizawa's legacy: distilled entirely on the steam-heated 'K' still (bought from the defunct distillery in 2015) and matured 3–5 years in ex-bourbon and wine casks. 100% Japanese barley, unpeated, non-chill-filtered, at a serious 55.5%. Floral, citrusy, vanilla nose; honey, ripe melon and subtle lactic acidity on the palate; sweet and long finish.
