The clean, unpeated flagship of Celtic Whisky Distillery, the Donnays' Breton distillery: a single malt of Maris Otter barley, double distilled over open fire in copper stills, matured solely in ex-bourbon casks and bottled at 46% unchill-filtered and uncoloured after ageing in damp cellars just steps from the sea. A saline, iodine nose with honey and toffee behind it; on the palate the iodine turns to apricot and sweet spices; a long, fresh, indulgent finish.
