Bimber Re-Charred Oak

Bimber's flagship bottling, the single malt that defined the house style: a 51.9% London whisky aged entirely in ex-bourbon casks hand re-charred by the house cooper to level 4 (Alligator Char), natural colour, unchill-filtered. A nose of stone fruit, spit-roasted pineapple, honey, nougat and a layer of wood smoke; a palate of red apple, ripe pear, banana and caramel, with butter, vanilla, pepper and ginger; a persistent finish of soft wood smoke and balanced oaky dryness. 51.9%, 700 ml.
