Bimber Distillery

Craft London distillery founded in 2015 in Park Royal by Dariusz Plazewski, of Polish roots. Single-farm Hampshire barley, floor malting, seven-day fermentation in wooden washbacks and direct-fired copper pot stills define its fruity house style, with a cooperage that deeply re-chars its own casks. In 2023 it opened its new Speyside distillery, Dunphail.
