Domaine des Hautes Glaces

The world's first organic, regenerative farm whisky distillery, founded in 2009 by agronomist Frédéric Revol on the Trièves plateau in the French Alps, now owned by Rémy Cointreau. It grows its own organic barley alongside fifteen neighbouring farms, ferments with natural sourdough yeast for 140 hours, distils over direct wood fire in a 25 hl copper pot still, and matures in new French oak plus Cognac, Armagnac and wine casks. From its parcels comes a terroir-driven range unique in European whisky.
