Method and Madness Single Pot Still

The experimental single pot still from Method and Madness, Midleton's laboratory. A mash of malted and unmalted barley, triple distilled and matured in bourbon and sherry casks before a unique finish in French chestnut casks. Nose of grated ginger, cinnamon, sweet vanilla, mint and red liquorice; palate of caramel, ripe banana, red apple and a herbal edge, with bitter chocolate and soft spice. Medium-long, spicy and indulgent finish of cocoa and warm oak. 46% ABV, non-chill-filtered.
