Waterford Organic Gaia

700 ml presentation. Organic Gaia is the first bottling from Waterford’s Arcadian series, and it is special in that it is the distillery’s first single malt whose barley does not come from a single farm, but from six different growers: John Mallick, Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley and Trevor Harris. Colour: Honey gold. Nose: aromas of orange zest, figs, seaweed, damp hay, liquorice, spearmint, rosewater and freshly turned earth. Palate: black pepper, clove, figs, cherries, caramelised pear, hazelnut, malted barley and warm spices. The finish is long, initially dry but gaining increasingly sweet notes.
