Waterford Lake Field
Waterford
Description
700 ml presentation. Downwind of Bishopswood – once witness to the macabre spectacle of a bishop’s hanging – Lakefield Farm, east of Durrow, Co. Laois, sits on gently undulating land farmed by the enigmatic Seamus Duggan, winner of our Barley Grower of the Year Trophy for his 2019 Barley Harvest. Derived from limestone and sandstone, these deep, well-drained Elton-series loam soils produce exceptional quality barley. Notes: Appearance: Pale gold with clinging oils and slowly snaking legs. Nose: warm custard, freshly baked bread, red apple, milk chocolate, dried flowers, buttercream, pine needles. It reminds me of waiting to eat a rhubarb and apple tart straight from the oven with custard and fresh cream. Palate: a gentle clove note at first leading into malt bread and biscuits, a mid-palate pepper that travels back along the tongue, then sweet melon and pear. Finish: It meanders like a tributary into the beginning of a grand river.
