Waterford Fenniscourt

Represents the first marriage of Irish barley and Irish peat in generations. Arcadian Barley, from our secret garden of delights, explores the natural flavours, intensity, and honesty of old customs. This same barley, wrapped in a diffused aroma, was dried over peat smoke by illicit distillers, a practice that became extinct in the 1850s. ABV: 50% Nose: slightly lactic and yoghurt-like, with herbal notes on the entry. Sage and thyme. Lots of oily notes with touches of iodine but not much peat smoke as such, just a slight ashy edge. Palate: full of malt aromas, with dried grass, lemon peel, and apples. Now distinctly more peat notes. Quite sweet and round at first. Then more herbal and floral, with aniseed, juniper, and ginger.
