700 ml presentation. Finished for up to a year in the rarest of all casks — Irish virgin oak — this is a milestone for Irish whisky. A conventional single-cask whisky that puts the flavours of Irish oak within everyone's reach. Each bottle is numbered and traceable to every cask and even to the tree from which it came. We sustainably felled 140-year-old trees from the ancient oak forests in the mountains around the distillery. This was the beginning of a one-year process that ends with an Irish oak cask. These special casks are filled with the quintessential Irish whisky: pot still. The higher levels of toasted oak and vanilla flavours that Irish oak brings to the liquid complement and balance the classic pot still spices. Notes: Colour — Bright gold. Nose: Unmalted grain aromas, oak wood, creamy vanilla notes, and a touch of charcoal. Sweet spice notes of cinnamon. Palate: On the palate we find cinnamon, ginger, and vanilla again. Crisp malt, as though you could chew it. Fruity notes of pear, peach, banana, and candied citrus, caramel, coconut, almonds, and maple syrup. On the finish, cloves and creamier vanilla, along with some red berries and toasted oak.
